Rainy days have come, and what other way to best warm us up than good bowl of chicken soup? Here's how I cook up the classic comfort food...
Ingredients:
1/2 kg chicken 1 5-peso coin sized ginger 1/2 tsp ground black pepper 1 tsp salt 1 tbsp soy sauce 1 dash of sugar 1/2 kg chicken 1 tsp garlic, minced 1 whole onion, chopped 1/4 kg elbow macaroni 1 small can of evaporated milk 1 carrot, cut into small cubes 2 stalks of celery, cut into small bits 5 stalks of spring onions, cut into small strips Salt to taste
1. Place chicken in enough water to cover it. Add ginger, pepper, salt, soy sauce and sugar. Cook to a boil. 2. Drain chicken but keep the broth. Cut chicken into small bite-size pieces and saute in garlic and onion. 3. Add broth and macaroni. Bring to a boil and simmer until macaroni is al dente. Add milk, carrots, celery and spring onions and cook for another 10 minutes. 4. Add salt depending on taste.
