Recipe of the Day: Adobong Tagalog

I didn't really know there's such a thing as adobong tagalog until my hubby made an Ilonggo version! Anyway, here's how I cook my adobo:


Ingredients:

1/2 kg pork cut in cubes
1 whole garlic minced
1 1/2 cup soy sauce
1 tbsp sugar
1 whole garlic minced
1 cup vinegar
2 laurel leaves
1/2 tsp ground pepper or
5 pcs pepper corns

1. Marinade pork cubes overnight in soy sauce, sugar and 1 whole garlic.
2. Get a 1/2 tsp of the 2nd minced garlic and saute the pork cubes on it.
3. Add the remaining soy sauce from the marinade, vinegar, laurel leaves and pepper.
4. Cover the sauce pan and let adobo boil, then simmer for 15 minutes in low fire.
5. Check back on adobo every 5 minutes. You'll know it's ready if the oil from the pork and sauce already separated.
6. Fry remaining garlic and add to adobo, let it cook for 5 more minutes.

You can also do this on chicken! Or better yet make chicken-pork adobo! Chicken would take lesser time to cook though. So make sure you cook pork first before adding chicken on a CPA!
